La recette sans doute la plus c\u00e9l\u00e8bre de la cuisine traditionnelle de Provence. L&rsquo;a\u00efoli est le nom de la sauce \u00e0 base d&rsquo;ail et d&rsquo;huile d&rsquo;olive qui donne son nom au plat. Mais nous adorons l&rsquo;utiliser de mille et une fa\u00e7ons.\u00a0On vous explique tout !<\/p>\n<h4>Ingr\u00e9dients<\/h4>\n<p><em>Pour 6 personnes<\/em><\/p>\n<h5><em>Pour la pr\u00e9paration de la sauce :<\/em><\/h5>\n<p><em>15 gousses d&rsquo;ail<\/em><\/p>\n<p><em>2 jaunes d&rsquo;oeuf<\/em><\/p>\n<p><em>30cl d&rsquo;huile d&rsquo;olive<\/em><\/p>\n<p><em>1,5 cuill\u00e8re \u00e0 caf\u00e9 de vinaigre<\/em><\/p>\n<p><em>Sel et poivre du moulin<\/em><\/p>\n<h5><em>Pour l&rsquo;accompagnement<\/em><\/h5>\n<p><em>1 kilo de filet de cabillaud<\/em><\/p>\n<p><em>10 carottes<\/em><\/p>\n<p><em>10 pommes de terre sp\u00e9ciales vapeur de taille moyenne<\/em><\/p>\n<p><em>300g d&rsquo;haricots verts<\/em><\/p>\n<p><em>6 oeufs durs<\/em><\/p>\n<p><em>du basilic frais<\/em><\/p>\n<h4>C&rsquo;est parti :<\/h4>\n<p>Pelez les gousses d&rsquo;ail, et <a href=\"https:\/\/cuisine.journaldesfemmes.fr\/astuces-termes-et-tours-de-main\/1958484-piler-definition\/\">pilez<\/a>-les dans un mortier jusqu&rsquo;\u00e0 obtention d&rsquo;une pur\u00e9e. Ajoutez d&rsquo;abord le vinaigre (1,5 cuill\u00e8re \u00e0 caf\u00e9). Puis les jaunes d&rsquo;\u0153uf. Versez l&rsquo;huile d&rsquo;olive en filet en tournant le pilon toujours dans le m\u00eame sens. Ajoutez du sel et du poivre. La sauce a\u00efoli est pr\u00eate lorsque votre pilon tient droit dans la sauce.<\/p>\n<p>Pr\u00e9paration de l&rsquo;accompagnement : Pochez le cabillaud\u00a020 minutes dans de l&rsquo;eau fr\u00e9missante.\u00a0Cuisez les l\u00e9gumes : 30 minutes les carottes et les pommes de terre (ou 10mn \u00e0 la cocotte minute) .<\/p>\n<p>Dans la recette classique, les oeufs sont durs ( 9 minutes de cuisson dans l&rsquo;eau bouillante), mais nous les pr\u00e9f\u00e9rons mollets. Si vous aussi vous pr\u00e9f\u00e9rez le jaune coulant alors ne cuire les oeufs que 6 minutes.<\/p>\n<p>Pour les haricots verts, ils doivent \u00eatre bien croquants. Pr\u00e9voir 3 minutes \u00a0de temps de cuisson \u00e0 la cocotte minute ou 15 minutes en cuisson plus traditionnelle \u00e0 la casserole.<\/p>\n<p>Pr\u00e9sentation du plat complet : pr\u00e9sentez les l\u00e9gumes et le poisson dans un grand plat. Pr\u00e9sentez l&rsquo;a\u00efoli dans un autre petit plat et ciselez le basilic frais.<\/p>\n<h4>Variante d&rsquo;utilisation de la sauce a\u00efoli :<\/h4>\n<p>Vous pouvez \u00e9galement utiliser cette sauce \u00e0 l&rsquo;ap\u00e9ritif . Pr\u00e9sentez dans un plat color\u00e9 des l\u00e9gumes croquants crus (<a href=\"https:\/\/www.roseetmarius.com\/blog\/les-fleurs-de-fenouil\/\">fenouil<\/a>, carottes fanes, c\u00e9leri, poivrons rouges et jaunes d\u00e9taill\u00e9s en lani\u00e8res) \u00e0 tremper dans cette sauce tr\u00e8s relev\u00e9e et parfum\u00e9e. Et partez pour la Provence !<\/p>\n<p>Si vous avez du pain un peu sec \u00e0 le couper en tranches fines que vous passerez quelques minutes dans un four chaud.
